Ask anyone, even a zoology expert, to define a list of animals and they would never agree 100%. It depends on how you classify certain animals, especially those on the "borders" between one category and another. So if I were you, just look at as detailed a list as you can and make your own decisions about how to classify (or not). A bat is sometimes regarded as a bird - but it is really a mammal. Would you then list "mammal" - or "bat" individually? In the latter case, you would then need to list every mammal individually. I don't think it matters, as long as you are consistent in your criteria. Again, would you list "insect", or each insect individually? Ultimately, you must make that decision, based on the practicalities of your game.
